Is there a cheat sheet/chart showing an icon picture of ALL the Nation tokens from all the expansions and explaining what they represent?

You might find my Player Aid helpful. It pulls all of the rules together into one document (except for the Equipment Pack, which I haven't had time to add yet).
You can find it on my User Page by looking for the Player Aid project.
Let us know if that's not what you're looking for and someone might be able to point you to something more helpful.

That Player Aid is really nice 
On the first page, you show Engineer tokens grouped together. I'm looking for something that would have them all listed individually and labeling which country each belongs to. Same for Special Forces. And any other nationality token that is "shield" shaped.

I don't know of any document that explains what nation the Badges represent because most of them are pretty recognizable. If you need, you could always download the various Rule Books and look up the badges that way, but it's not the reference page you want.

On my user page I just posted what you are looking for, you can get it here.
This comes from the 'Unit & Badges Reference' inside the latest Vassal Module, so credit goes to the creator of the module. I simply saved it as a pdf file and posted it.
It seems pretty complete to me, including the new equipment pack units.
