If I own a physical Ticket to Ride game (in my case, Europe) and have used the code to add it to my account, can I play that map in the digital Ticket to Ride for free?

No, the code you entered is just a way for you to keep track of the games you own. A very long time ago the code gave access to a simple online version of the digital game but since then Days of Wonder has put a lot of time and money into creating an amazing digital game of Ticket to Ride so you'll have to buy the game on the digital platform you want to play on.

Darn - I hoped the code would give me access to the digital game.
If I buy the digital version of the game, can I play online with friends who don't own it? Or does everyone have to own it in order to play?
